Quiet Friday Night



Tonight we decided to stay in and not go anywhere or hangout with anyone. We have done something for like 12 nights straight and we are pooped!! We needed a break so we thought it would be fun to stay home, make a homemade pizza, and watch Indiana Jones. This might just have to become a Friday night tradition at the Jensen house.

Big Boy Daniel!!

Daniel is becoming quite the big boy! He has such a sweet little personality and loves clapping and giving hi-fives. The other day when we were at the store he was waving and saying HI to everyone. He was the hit of the store and had everyone giggling.

Happy Monday!

We had a great day off today! This morning we did yard work and then decied that we wanted to do something fun as a family in the afternoon. We started off with the intensions of going to a local mill to take some pics of it and a near by waterfall, but as we were driving to the mill we kept looking at Mt. St. Helens. The mountain looked gorgeous so we decided what the heck, lets go to the mountain. So that's where we went. Good thing I am a prepard Momma cause our 1 hr. car trip turned into a 4 hr. one! We had lots of fun. Here are some of our pics from the day:

Pie Recipe


OK, after a week of debate I have decided to post my recipe! Sometimes the "raw eggs" thing freaks people out, but as long as you keep the pie cold, I don't think it's a big deal. And maybe you could use egg subsitiute instead of the real thing.... Bake away my friends!


Chocolate Truffle Pie Recipe

1 baked pie crust or graham cracker crust
1 cup semi-sweet chocolate chips (Nestle only)
1 cup powdered sugar
½ cup butter (good quality)
1 tsp. vanilla extract
4 eggs

Whipping cream
Chocolate bar (for chocolate shaved chocolate pieces)

1. Melt chips and set aside to cool.
2. Cream butter and sugar until very fluffy (about 3 minutes).
3. Add vanilla and melted chips.
4. Add eggs (cold from the fridge), one at a time, beating vigorously after each egg.
5. Pour into pie shell and smooth on top.

6. Put in fridge at least 4-5 hours before serving. (Can be covered and frozen for a few days)
7. Just before serving, top with fresh sweetened whipped cream and shaved chocolate pieces.

This pie is amazingly chocolaty and delicious! It must be served chilled for best texture and taste. I also think that a homemade graham cracker crust is a nicer compliment to the chocolate than a traditional pastry crust.

Couples Tag

I got tagged from Autum. So here goes:

How long have you and your s.o. been together? We met at Ricks College in early September 2000, so that would be about 7.5 years.

Who eats more? Steen definitely eats more at mealtime. We both like to munch on snacks/treats, but if I wanted to, I could probably outdo Steen in this department. I like my cookies and treats!

Who said I love you first? Steen. I knew that I loved him before he actually said it out loud to me, but I was waiting for him to say it first! One night we had gone out and he was dropping me off at the door and it just came out. I of course said it back to him!

Who is taller? Steen is 6’3” and I am 5’7”. I like em’ tall!

Who sings better? Oh, that would definitely be me, but that’s nothing to brag about - I don’t have the best of voices.

Who is smarter? Definitely Steen. He is Mr. 4.o, even through grad school. I don’t know how he did it. When we were at Ricks we took a Bio class together. I would study for hours and he would browse through his notes and he would get the 100% test score and mine would be like 75%. Lets only hope the kids get his brains! I will have to say that I am smarter in some areas - like home improvement, fixing things, & being crafty!

Who does the laundry? Me. Sometimes it takes a day or two (ok maybe 3 or 4) to get put away, but I am the laundry doer of this house! Steen will sometimes put his pile away, but I don't count on it.

Who does the dishes? Me. I usually do the loading and unloading, but sometimes if I get lucky (a few times a week!) Steen will unload without me even asking.

Who sleeps on the right side of the bed? Me cause it’s closest to the master bathroom for those nighttime bathroom visits!

Who pays the bills? Steen earns the money and I pay the bills. I have quite the system. I should have been an accountant!

Who mows the lawn? We both do. I actually like doing it. In the summer we usually mow two times a week so we will each take a turn.

Who cooks dinner? That would be me!! I love to cook, so I have no problems being in charge of this task.

Who drives when you are together? Sometimes I pick Steen up from work so instead of getting out of the car I will drive, but most every other time Steen is the driver.

Who is more stubborn? That would definitely be me.

Who is the first to admit when they're wrong? Steen. I like to think that I am right about everything. This is why Steen is good for me. He helps me realize that sometimes Katie isn't always right. I’m working on this one!

Whose parents do you see the most? We live about 20-25 minutes from both of our parents. But we probably do see mine the most. I see my mom lots cause we hang out during the week and go shopping and stuff.

Who kissed who first? I would have to say it was a mutual thing! I knew he was about to lay one on me and he know I was going to do the same to him. It just kind of flowed. We were actually watching a movie in my apartment (Colonial #1o7) and it happened one night.

Wh0 proposed? Steen of course! It happened on December 23, 2000. Steen had bought the ring a few days earlier and was planning on proposing in February, but on December 23rd I was on my way to his house to pick him up to go a big family Christmas party and he decided to propose like 30 minutes before I got there. Steen thought that it would be so great for us to walk in the door of the party being “officially engaged”. He had just happened to have bought me a dozen red roses that day so when I walked in the house he handed me the roses took me upstairs and a few minutes later he was down on one knee asking me the big question. I think he actually had to drive us to the party cause I was too busy staring at the ring on the way there!

Who is more sensitive? Me!

Who has more friends? We both have lots of friends and many of our friends are married couples and we all hang out together. I do keep in touch with my friends better than Steen keeps in touch with his.

Who has more siblings? Me, I am the oldest of 5. Steen is the oldest of 4.

Who wears the pants in the family? Steen wears the pants of the family. But I will say that sometimes I have a leg in those pants.
