Wildlife Refuge

On Saturday we needed to get out of the house so we decided to pack up some lunch and head for the Ridgefield Wildlife Refuge that is about 5 minutes from our house. From the minute we got there we knew that we had timed it right - birds where everywhere!! Megan thought that we were at Yellowstone, that was kind of funny! We saw about 20 blue herons, 2 muskrats, white swans, and a variety of different kinds of ducks. We had a great time driving through the refuge and eating our lunch!

Trip to Rexburg!

Steen, Megan and I took a quick trip to Rexburg from Sunday to Wednesday. We had such a great time visiting with Emily, Golden, and new baby Jensen! Daniel stayed at home and we missed him a lot, but only having one kid to deal with on such a quick trip was great. It was so nice to visit with my sister and with Steen's sister Elina. Even though we had such a quick trip - it was worth all the traveling to see everyone and to meet cute baby Jensen!

Megan called herself "Babysitter Megan" because she was such a great helper. She was so sweet to Jensen. Whenever he would fuss or when his pacifier would fall out Babysitter Megan was to the rescue. I now can say that Megan is going to be a great help to me when we have our baby sister in May! She even rocked him to sleep a few times and she is very proud of that!

Danish Kringle

This pretzel shaped pastry is a traditional Danish favorite. Flaky layers of pastry are filled with almond paste and raisins, shaped into a pretzel and just before it is baked it is topped with sugar and sliced almonds. We like the traditional Danish Kringle, but you can get them filled with things like apricots, raspberries, and apples.

Steen and I just ate a few slices of one that Steen's Mom gave to us today and let me tell you - it's delicious. If you want to order one for yourself this great Danish bakery in Seattle called Larsens has them. You can mail order from them or if you're in the Seattle area just drop in and pick one up. Steen and I try to stop in to Larsens whenever we visit Seattle! I just wanted to share cause most of you have probably never heard of a Kringle - this treat is definitely worth trying!

Baby Jensen is a GIRL!!

Yesterday we had our big ultrasound and we found out that baby #3 is a GIRL! We are so excited - especially Megan. She can't wait to have a little sister to call her own. Now we need to start thinking of a name...suggestions welcome!
